Kale Chips: Eat for Fuel!!

Kale is a member of the cabbage family, like broccoli, cauliflower, and Brussel sprouts, and it's incredibly nutritious!!!



Ingredients:
1 bunch of curly or dinosaur kale
1-2 teaspoons olive oil (just enough to lightly coat)
Pinch of salt
1 Tbsp nutritional yeast (can use Parmesan cheese)
1/2 tsp chili powder

Directions:
  1. Preheat the oven to 350 degrees. 
  2. Tear or cut the kale leaves away from the thick stems and tear the leaves into bite-size pieces. Wash and thoroughly dry the leaves.
  3. Transfer the kale to a large bowl and drizzle with the oil, sprinkle with the salt, and add the nutritional yeast and chili powder. With your hands or tongs, toss the leaves until fully coated.
  4. Lay the leaves out on a baking sheet in a single layer, sprinkle them with more nutritional yeast to taste and bake until the leaves are crisp but not burnt. 10-15 minutes, checking every 5 minutes or so (feel free to remove ones that may be done ahead of some of the others).
  5. Enjoy with a meal or for a salty snack!
May need to adjust salt based on your taste.

Carrot Cake Muffins

So this recipe, started as me wanting to make a healthy cake for my mom's birthday bash! Her favorite kind of cakes are carrot and spice cakes.  So, the search for a good recipe began. I found one and healthified it to pieces and made it!  Then I found a low fat/cal cream cheese icing recipe to use.  Each slice was under 150 calories and had protein and fiber galore!!  I was so proud of myself that I mistakenly told them before serving it.  My sister-in-law, who does not concern herself with eating healthy, turned up her nose and said, "doesn't that take all the fun out of it?"  I said, "Try it and let me know if you think it does."  The rest of the night they spent asking for seconds and raving about how it was THE best carrot cake they had ever eaten!! "Better than Grandmas" my oldest brother whispered.

So, I made muffins out of the recipe, left off the icing and tada, we have another everyday snack recipe that is healthy, cheap and easy!



Ingredients:
6 egg whites
1/2 c white sugar
1/2 c + 1/3 c Stevia (all natural zero calories sweetener-not artificial!)
1 c unsweetened applesauce
1/2 c. skim milk or almond milk
1 1/2 tsp vanilla extract
1/4 tsp ground cloves
1/2 tsp ground nutmeg
1 Tbsp ground cinnamon
2 tsp baking soda
2 c 100% whole wheat flour
1 (8oz) can crushed pineapple with juice
2 c shredded carrots
1/2 c chopped walnuts or almonds
1/2 c raisins

1. Preheat oven to 350 degrees. Lightly grease pan with non stick spray.

2. In large mixing bowl, beat egg whites.  Slowly beat in sugar, then applesauce, skim milk, and vanilla. Stir in cloves, nutmeg, cinnamon, baking soda, and flour. Stir in, one ingredient at a time, pineapple, carrots, walnuts, and raisins.  Pour into the prepared pan.

3. Bake 35-40 minutes for cake size pan, less for muffins (start checking at 20 min). It is done when toothpick inserted in center comes out clean.

Icing Recipe for making it a cake:
Ingredients:
1-8oz. pack of fat free or low fat cream cheese
1/2 cup pink grapefruit or orange juice
1/2 cup cold milk
2-3.4 oz packs of instant vanilla pudding mix (or make a homemade version)
1-8 oz. container of fat free frozen whipped topping, thawed

Directions:
In a large mixing bowl, beat cream cheese until fluffy.  Then slowly beat in the juice and milk.  Add pudding mix.  Beat on medium speed for 2 minutes.  Fold in whipped topping.  Store in refrigerator.

Peanut Butter Banana Oatmeal Square

OH MY! These are yummy! Great fast breakfast or snack! I usually double the recipe.

Healthy Snack


Ingredients:
1 1/2 c. quick cooking oats
1/4 c packed light brown sugar
1 tsp baking powder
1/2 tsp salt
1 tsp ground cinnamon
1 tsp vanilla extract
1/2 c skim milk or almond milk
1 large egg, lightly beaten
1 large mashed banana
1/4 c creamy natural peanut butter (or almond butter)

Mix together the quick cooking oats, light brown sugar, baking powder, salt and ground cinnamon.
Add in the vanilla extract, milk and egg. Mix the ingredients together.
Then add the mashed banana and peanut butter. Combine all the ingredients.
Pour the mixture into a lightly greased 8x8 baking pan. Bake at 350 degrees for 18-20 min.

Cut into 9 squares. Wrap individually with plastic wrap and store in the fridge for quick grab. Warm or eat cold.

Yummy Bran Muffins

These are wonderful Muffins that we make often for afternoon or morning snacks! They are great for breakfast or desert too! We all love them!!  AND they are healthy and cheap!!



Ingredients:
6 c. bran cereal (I use bran flakes from Aldi)
2c. boiling water
4 eggs beaten (can use 4 Tbsp flax seed meal, mixed with 12 Tbsp water and let sit for 2 min.)
1 qt. butter milk (can use just under 1 qt or 4 c. of skim milk with 4 Tbsp of white vinegar)
5 tsp baking soda
1 c. + 1 Tbsp unsweetened applesauce
3 c. stevia or sugar or a combination of both
5 c. 100% whole wheat flour
2 tsp. salt

Yield: 42 Muffins typically...

Pour boiling water over 2 c. bran cereal. Let stand. Mix in applesauce, rest of cereal, sugar/stevia, eggs, & buttermilk. Sift flour, baking soda, and salt.  Combine all ingredients. Scoop into muffin pans. Bake at 400 degrees for about 20 min. 

This mix will keep in the fridge for 6 weeks in a jar or bowl if you don't want to make them all.  However, I always make them all and freeze a couple dozen until we need them. We store the ones we are eating soon in the fridge in a gallon zip lock bag, just to keep them fresh.

I use the buttermilk substitute always, because I never I buttermilk and don't want to buy it for one recipe here and there.  I use the flax seed meal a lot too because it is cheaper than eggs and has a ton of nutritional benefits!  As far as the Stevia, that is an all natural, plant based sweetener without calories.  It does not taste the same as sugar but it is sweet and it is all natural (we are growing it in our garden as a matter of fact).  You can buy it on the shelf of any grocery store though. It is bagged as Stevia in the Raw.  It is much different than artificial sweeteners, which are mostly chemicals that we have no idea the effects of yet.
