Yummy Bran Muffins

These are wonderful Muffins that we make often for afternoon or morning snacks! They are great for breakfast or desert too! We all love them!!  AND they are healthy and cheap!!



Ingredients:
6 c. bran cereal (I use bran flakes from Aldi)
2c. boiling water
4 eggs beaten (can use 4 Tbsp flax seed meal, mixed with 12 Tbsp water and let sit for 2 min.)
1 qt. butter milk (can use just under 1 qt or 4 c. of skim milk with 4 Tbsp of white vinegar)
5 tsp baking soda
1 c. + 1 Tbsp unsweetened applesauce
3 c. stevia or sugar or a combination of both
5 c. 100% whole wheat flour
2 tsp. salt

Yield: 42 Muffins typically...

Pour boiling water over 2 c. bran cereal. Let stand. Mix in applesauce, rest of cereal, sugar/stevia, eggs, & buttermilk. Sift flour, baking soda, and salt.  Combine all ingredients. Scoop into muffin pans. Bake at 400 degrees for about 20 min. 

This mix will keep in the fridge for 6 weeks in a jar or bowl if you don't want to make them all.  However, I always make them all and freeze a couple dozen until we need them. We store the ones we are eating soon in the fridge in a gallon zip lock bag, just to keep them fresh.

I use the buttermilk substitute always, because I never I buttermilk and don't want to buy it for one recipe here and there.  I use the flax seed meal a lot too because it is cheaper than eggs and has a ton of nutritional benefits!  As far as the Stevia, that is an all natural, plant based sweetener without calories.  It does not taste the same as sugar but it is sweet and it is all natural (we are growing it in our garden as a matter of fact).  You can buy it on the shelf of any grocery store though. It is bagged as Stevia in the Raw.  It is much different than artificial sweeteners, which are mostly chemicals that we have no idea the effects of yet.
