Ingredients:
1 bunch of curly or dinosaur kale
1-2 teaspoons olive oil (just enough to lightly coat)
Pinch of salt
1 Tbsp nutritional yeast (can use Parmesan cheese)
1/2 tsp chili powder
Directions:
- Preheat the oven to 350 degrees.
- Tear or cut the kale leaves away from the thick stems and tear the leaves into bite-size pieces. Wash and thoroughly dry the leaves.
- Transfer the kale to a large bowl and drizzle with the oil, sprinkle with the salt, and add the nutritional yeast and chili powder. With your hands or tongs, toss the leaves until fully coated.
- Lay the leaves out on a baking sheet in a single layer, sprinkle them with more nutritional yeast to taste and bake until the leaves are crisp but not burnt. 10-15 minutes, checking every 5 minutes or so (feel free to remove ones that may be done ahead of some of the others).
- Enjoy with a meal or for a salty snack!
